HICKORY SMOKED HAM

REFRIGERATE IMMEDIATELY. Keeps well for two weeks. If mold spots appear just wipe them off. Can be freezer wrapped and frozen for three months. Ham is precooked.

To heat, place on rack in covered roasting pan. Add a small amount of water to pan. Bake in pre-heated325° Foven for 10 to 15 minutes per pound or to an internal temperature of 140° F. If glaze is desired, brush on one half hour before end of cooking time.


HICKORY SMOKED HAM STEAKS AND PORK CHOPS

REFRIGERATE IMMEDIATELY. Keeps well for one weeks. Can be freezer wrapped and frozen for one month. Ham steaks and pork chops are pre-cooked.

To broil, brush each side with butter. Broil each side 5 minutes.

To pan fry, melt butter in skillet. Pan fry over medium low heat until lightly browned.


HICKORY SMOKED CANADIAN STYLE BACON

REFRIGERATE IMMEDIATELY. Keeps well in the piece for two weeks or one week if sliced. Can be freezer wrapped and frozen in the piece for two months or one month if sliced. Canadian style bacon is pre-cooked.

Bake the piece in a pre-heated 325° F oven for 10 to 15 minutes per pound or to an internal temperature of 140° F.

To pan fry, melt butter in skillet. Pan fry over medium low heat until lightly browned.


HICKORY SMOKED BACON SLAB OR SLICED

REFRIGERATE IMMEDIATELY. Sliced keeps well for two weeks. Slab keeps well for one month. If mold spots appear, just wipe them off. Can freezer wrapped and frozen for two months.

To pan fry, start with a cold skillet. Pan fry over medium low heat until crisp. Bacon does well in the microwave oven (follow your microwave instructions).


HICKORY SMOKED TURKEY AND TURKEY BREASTS

REFRIGERATE IMMEDIATELY. Keeps well for two weeks. Can be freezer wrapped and frozen for two months. Turkey is pre-cooked.

Can be served at room temperature. Heating of the turkey improves the flavor.


HICKORY SMOKED PORK BABY BACKRIBS

REFRIGERATE IMMEDIATELY. Keeps well for two weeks. Can be freezer wrapped and frozen for two months.

Parboil for thirty minutes. Then simmer the ribs in your favorite barbeque sauce at medium heat for two to three hours. When finished, the meat will fall from the bone.


HICKORY SMOKED DRIED BEEF

REFRIGERATE IMMEDIATELY. Keeps well for a long period if stored in a sealed jar under refrigeration. Can be freezer wrapped and frozen for two months.

Sliced thin, can be used in sandwiches or in a hot cream sauce.


HICKORY SMOKED SWEET SAUSAGE, HOT SAUSAGE AND KOLBASSI

REFRIGERATE IMMEDIATELY. Keeps well for two weeks. Can be freezer wrapped and frozen for two months.


Sausages can be boiled, or pan fried. When boiled, add to boiling water and simmer for 10 minutes. When broiled or pan fried, cook over a low heat shaking the pan constantly until they are an even brown.
